Because he is, like all knights, a gentleman. All Japanese gentleman (and ladies) always carried fans and put them to many uses, including pocket organizer. He likely has notes for his day's activities written on the back of it and perhaps the "number" of a young woman who he met on the way to the shoot that he would like to "take for coffee."

This sort of thing really frustrates me as well. I understand why he switched to the video format but I miss a lot of Scott Adams' good analysis because I have no patience for the initial small talk nor interest in many of his topics that he discusses in his vlogs every day. I've taken to following his Twitter feed (though I don't twit myself) but I get the sense I am missing a good amount of context.

To be fair to Craddock, I think you (or Julia) ought to have pointed out to non-UK viewers that Mincemeat does not contain meat - it is mainly fruit and sugar. Having said that, it certainly won't be something I will order anytime soon - look at how much icing sugar gets layered on top of what is already a very sweet dish.
